The Magic in Finishing

Have you ever noticed something missing when you try to replicate a favorite restaurant dish in your own kitchen? You can follow the recipe and nail the technique, but something about it just isn’t the same. Here’s the secret: It’s all in the finishing. Finishing is, essentially, a last layer of seasoning––that last little bit of love and finesse into what you’ve created.

If I could pass along just one tip that would make you a better cook, it would be the ability to properly finish a dish. And the best part is, it’s also the easiest thing you can do.

A simple grain salad you prepare for yourself is completely transformed by adding a bit of sherry vinegar to the grains while they’re still warm. That last drizzle of olive oil and sprinkle of sea salt turns it into a beautiful, thoughtful lunch. Burrata is good, but burrata with a fantastic olive oil and sea salt is just the best. The opportunities are endless...

These simple ingredients are how you elevate the everyday. I hope you’ll try them and allow them to become part of your cooking process, and part of your life.

"Dark chocolate and sea salt were made for each other."

"A drizzle of olive oil is the perfect finish for just about everything."

"A dash of aleppo pepper guarantees avocado toast that’s anything but basic."

"A splash of sherry vinegar brings buttery, sautéed mushrooms to life."

Flake Sea Salt

Salt is the most important element in seasoning food (or more simply stated, making it taste good). While it’s important to add salt throughout the cooking process (we use kosher for cooking), adding a sprinkle of fine flake sea salt before serving has the power to take any dish to the next level.

What It Is

Flake sea salt is produced by essentially evaporating the water from the sea. Flake sea salts have varied, crystal-like structures that add a satisfying texture and delicate flavor to both sweet and savory foods.

Hand-harvested from the cold and pristine waters of Netarts Bay on the Oregon Coast, Jacobsen’s Flake Finishing Salt has bright salinity and a delicate crunch and is preferred by many top chefs in America.

Extra-Virgin Olive Oil

As a finishing ingredient, premium olive oil adds a burst of flavor and rich mouthfeel to virtually any dish. The same way you might accessorize a basic outfit, olive oil has the power to make any dish feel more special and luxurious. We buy large tins of standard extra-virgin olive oil to use for cooking or as the base of a dressing, and reserve the good stuff for just that final drizzle.

What It Is

Finishing olive oil is simply a higher-quality extra-virgin olive oil.

Aged Sherry Vinegar

After salt, acid is the next most important ingredient in seasoning a dish. Acid most commonly comes in the form of vinegar or citrus juice. Acid can be added at the end of the cooking process to add a certain brightness to the dish or to cut through richness, for balance. We like to add a tiny squeeze of lemon to most things we cook. And as far as vinegar goes, Sherry vinegar is by far our favorite. It has a great depth of flavor, and it makes the most delicious vinaigrette.

What It Is

Sherry vinegar is made from Sherry wine, and produced in Spain. Sherry vinegar has a more complex flavor than red wine vinegar, but it’s not as sweet as balsamic, so it can be used for a wider variety of things.

Aleppo Chile Pepper

While most cooks think of “salt and pepper” as a basic flavor enhancer for any type of food, we invite you to start thinking of pepper as its own ingredient. Black pepper has a strong flavor and therefore shouldn’t go everywhere salt does. We love black pepper for many things, but lately aleppo pepper has taken the spotlight as our go-to spicy sprinkle. Think of it as the cooler, more interesting cousin to red chile pepper flakes. The flavor can be described as bright, fruity, earthy, and tart with a moderate heat level.

What It Is

Aleppo chiles are a pleasantly hot and fruity variety of chile native to the village of Aleppo, Syria. Commonly used in Mediterranean cooking, this chile pepper has popular with many of the best chefs in the world.
